Wheatgrass uses the same basic tray-and-light workflow as many microgreens, but it is grown from cereal grain and usually harvested as a dense stand of grass rather than at the cotyledon stage.
Start with seed intended for food production
Use clean, untreated wheat seed or berries sold for sprouting or growing.
Soak and drain
Hydrating the grain before sowing helps it begin germination. Drain well so the seed is moist rather than sitting in stagnant water.
Spread densely but evenly
Wheatgrass is normally grown as a close stand, but seed should still form a reasonably even layer rather than thick mounds.
Cover during early germination
A cover helps maintain humidity while roots establish. Check the tray so moisture does not become excessive.
Move into bright light
Once shoots are established, provide even light. Rotate a windowsill tray if directional light makes the grass lean.
Harvest cleanly above the medium
Cut the grass with clean scissors when it reaches the height and tenderness you prefer. Avoid cutting into the growing medium.
