Beet microgreens bring red and pink stems to a tray, but they are slower and more irregular than easy brassicas. The rough, corky seed structure holds multiple seeds and benefits from patience.
Use fresh, untreated seed
Beet seed quality matters because uneven germination can become more obvious in a slower crop.
Consider a short soak
Many growers hydrate beet seed before sowing to help soften the seed structure. Drain thoroughly so the tray does not begin overly wet.
Sow with room for the seedlings
Beet seed units are larger than broccoli or kale. Give them enough space to emerge without creating thick piles.
Maintain steady moisture
Keep the medium moist through germination but avoid standing water. Drying and re-wetting can exaggerate uneven emergence.
Move into light once established
Good overhead light helps the colored stems remain sturdy and the canopy develop evenly.
Harvest carefully around hulls
Beet seed coats can cling to emerging leaves. Let the canopy expand and shed what it can naturally before gentle cleanup and harvest.
